It is fun to make it yourself though, and you control the ingredients. You can grind them yourself, if you want, OR just use purchased almond paste. :) For the almond paste, I just used purchased pre-gound almonds. I'm not sure if these cookies are authentic Italian or Italian-American, but either way, they are delicious.

:( I don't think the dough was really to blame, but the fact that my food processor is about 6 years old now. Sadly, my food processor died while I was making the cookies. I used my food processor to make the almond paste first (a few days before making the actual cookies) and then used it again to make the actual cookies. I can't buy almond paste here, but never fear, because I made my own quite easily with ground almonds, powdered sugar, and egg whites. It turns out they toast in the oven anyway though, so you don't really need to. I toasted my pine nuts first, but the toasting went a little overboard because I thought I had a few minutes for a bathroom break. Chewy inside, firm on the outside, and the nice crunch of pine nuts. Make a batch and see what you think.I loooooove these cookies!!!! They are so good- some of my favorite cookies ever. Don’t expect a snappy crunch, the almond paste makes them chewy. They’re easy, fancy, and can’t be beat enjoyed with a cup of coffee or tea.

That’s exactly what almond paste does for a recipe it makes things a little more chic, a little more Euro, a little more sophisticated. Please take note of the word FANCY in the title. Our Cheater Chef recipe Fancy Almond Jam Bars was the happy result. One day I got the big idea to add some paste to the old shortbread-style jam bar recipe you find on the bag of Martha White All-Purpose flour.

I don’t even chill the dough.Īlmond paste has always been an exotic baking aisle ingredient for me, one I really didn’t know how to use besides making chewy macaroons, which I love. For this style of cookie, you just roll the dough into balls and the balls into sugar, then give them a flattening on the baking sheet. I love both because the doughs are super easy to handle and require no rolling out and cutting, so I make them more often. This recipe, and my favorite Nashville Cornmeal Cookies, will be my signature cookies for years to come. Almond Butter Cookies made with almond paste are my latest obsession.
